I'm so Fancy, but You Already Know!

I hope you are all doing wonderful! I was just thinking the other day how I haven't done a blog post in a while but my Facebook news feed has been filled with wonderful things like engagements, new babies, pictures of baking and summer activities. Its been so happy, encouraging and positive. I know there is so much negativity on social media these days and lately with certain pages I'm scared to look at someone wrong or park wrong at the super market or take the turn wrong because guess what, a picture of you and your vehicle could end up on a social media sight depicting you as a moron... With that said I LOVE the positivity of social media. With the babies, baking, weddings, love and just plain encouragement. I get so much encouragement and support from social media that I try and stick with only seeing the positive. Its amazing how social media can bring people together, reconnecting with old friends or getting encouragement from someone you haven't talked to in 8-10 years. Its been amazing for me over this last year and since I started writing this blog. its nerve wrecking sometimes to open yourself up so personally on social media for the world to see. I did it because I wanted to encourage. I wanted to inspire even just ONE person to live a healthier lifestyle.

I know it's easier said than done believe me. I'll be the first to admit I am not perfect at living a healthy lifestyle but I have learned and adapted so many healthy habits this year that I know I am well on my way to living this way for a lifetime. There's no turning back for me now. With a good year under my belt it's an amazing feeling. This week I was cooking supper one night and I needed a tomato type sauce. I decided to roast out some peppers and cherry tomato's I had in the fridge with a few cloves of garlic and olive oil. After they were roasted I blended them in my Nutri bullet and added them to the red wine vinegar sautéed onions I had just done and VOILA! an amazing red pepper tomato sauce was born. I also added a little bit of honey to sweeten it up. It is a totally amazing sauce and there really is no recipe because you can add whatever you like. I used yellow peppers, red peppers, garlic and cherry tomatoes. Today we made a big batch and added sautéed onions, and mushrooms. It is such a versatile sauce that can be used  with bread or pasta or zucchini pasta or meatballs. Anything really, we love it! Its little things like that you can do to just add a little bit of healthiness to your week. That sauce is low in fat, and loaded with nutrients from the fresh roasted veggies.


I have really started looking at food in a different light. I look at it in the way like what am I getting from this food? What is the nutrient content and health benefit of this food? It really changes the way you look at things you are eating. Like my last months post I added Greek yogurt to everything I eat almost. and I'm still doing it. We had a treat night with some tortilla chips and salsa the other night and I dipped mine in Greek yogurt (sour cream used to be my favorite part of nachos) and its delish and I know its adding protein to my diet and calcium. I don't have to feel guilty about eating some flax seed, baked tortilla chips and salsa with Greek yogurt. Small changes have made the hugest difference in my life.

Enough about me preaching about healthy eating, remember my addiction with Boom Chicka Pop!? Yes, that's still very real. I also know though that there could be worse things to be addicted to! We'll go with that for now. I wanted to fill you all in on my stats! I am still working on my goal of loosing 20-30 more lbs. So now I have 17-27lbs to go! I am down a total of 123lbs & 98 inches from my neck down to my shins! Nick looked at my fat pants and thinks I may have shrunk in height as well. I told him no I haven't gotten shorter it's just that now I don't have a fat ass pulling my pants up! lol I have included some pictures with my "fat pants" something I'm not sure I will ever throw away because it is a very real and fast reminder of a place I once was in that I don't ever want to go back to. Complacency doesn't take long to set in sometimes so its good to have reminders like that. I added some
other comparison photos. I hope you are all doing wonderful and having a great start to summer! I am very much looking forward to enjoying summer in much smaller clothes, not sweating or being uncomfortable at the pool or beach. Just living my life the healthy way!
